All the barrels we use to age our cognac are made exclusively from French Limousin oak, which contributes to the aromatic development of the blended eaux-de-vie. It does this by allowing a good exchange between the eaux-de-vie and the air inside the cellar thanks to its large and open grain, which also lets it impart a rich vanilla-like flavour to the ageing cognac.

Ageing:
To truly reveal the aromatic heart of the blended eaux-de-vie, our Cellar Master ages them in Limousin oak barrels to reveal a greater aromatic breadth and intensity. And because Fine Champagne eaux-de-vie have greater ageing potential, Rémy Martin choose to age them for much longer than the minimum time required by law.

Our cognac reserves:
At Rémy Martin, we hold a true treasure in the cellars - our precious reserves of Fine Champagne eaux-de-vie, which represent 115 years of the vignerons" craft. These reserves ensure Rémy Martin
Fine Champagne Cognac will always be preserved for future generations.

The angel"s share:
A certain pourcentage of Rémy Martin Fine Champagne reserves evaporates yearly during the ageing process.
